A fun set of cookies you can make with whichever jams are your favorite.


Makes approx 14 cookies

Ingredients

-1/2c unsalted butter, at room temperature

-1/2c refined coconut oil, at room temperature

-1 cup sugar

- 1 ½ tsp salt

-1 Tbsp Vanilla extract

-½ tsp baking powder

-⅛ tsp baking soda

-1 large egg,

-3 cups (375g) all purpose flour, plus more for dusting

Directions

  1. Preheat oven to 350f/180c. Line two or three baking trays with parchment paper.

  2. In the bowl of a stand mixer fitted with the paddle attachment, combine butter, coconut oil, sugar, salt, vanilla paste/extract, baking powder and baking soda. Mix on low for a few seconds, then turn up the mixer to medium/high and beat for approximately 5 minutes, until light and fluffy, scraping down the bowl once or twice during the process. Add the egg and beat until incorporated.

  3. With the mixer on low, add the flour. Mix until just incorporated and the dough is balling around the paddle. Finish incorporating the flour with a spatula if necessary to form a cohesive dough. It will seem a little more sticky than most cookie doughs. Divide in two. If you are preparing the dough ahead of time, wrap in plastic and refrigerate for up to a week.

  4. Turn half of the dough onto a very well floured surface. Roll to ¼ inch (about 7mm). Cut out 2.5 inch circles out of the dough, and transfer them to the prepared baking trays using an offset spatula, leaving an inch between them for spreading. Re-roll and repeat with scraps.

  5. Using a smaller cutter, cut shapes from half of the circles, removing the cut out dough using a skewer if it does not come away cleanly.

  6. Bake one tray at a time for approximately 11-12 minutes depending on your preference, checking for doneness after 10.

  7. Allow to cool for 30-40 minutes on the baking tray, then transfer to a cooling rack and allow to cool completely.

  8. Once the cookies are cool, sandwich a plain 'bottom' and a cut-out 'top' together using jam.

  9. Store in an airtight container.

* Make these vegan:

  • Sub the butter w/ vegan butter & cut the salt to 1/2 tsp (most vegan butters are salted)

  • 1 lb frozen pizza dough, defrosted at room temp.

  • 2 yellow onions, sliced

  • 1/4 tsp Salt

  • 2 Tbsp Butter

Directions:

Caramelize Onions

  1. Heat butter and oil in large saute pan over medium heat.

  2. Add sliced onions & salt. Stir to combine and coat onions in butter & oil mix. Cook until onions are transparent.

  3. Turn heat down to low. Continue to cook onions, stirring often until very soft and browned throughout.

Assemble

  1. Heat oven to 425℉

  2. Line a sheet pan with parchment paper or foil. Stretch dough out thin over the pan.

Ingredients

Pavlova Cake

  • 4 Egg whites, large, room temp

  • 1 cup Sugar, white

  • 1/4 tsp. of Salt

  • 1 tbsp. Corn starch

  • 1 tsp. Lemon juice

Chantilly Cream

  • 1 1/2 cup Heavy cream (cold)

  • 4 tbsp. Powdered sugar

  • 1 tsp. Vanilla paste or extract

Roasted Peaches w/ Forbidden Fruit Spread

Directions:

Make Pavlova Cake

  1. Preheat the oven to 320ºF. Line a sheet pan with parchment paper and draw an 8-inch ring in the middle of the pan to guide you with shaping a perfect Pavlova

  2. Clean bowl of your stand mixer with a paper towel soaked in vinegar to remove any traces of fat. Add your

    egg whites and salt and start whisking them on low speed for approx. 5 minutes until foamy

  3. Increase the speed to high and start adding sugar, in total in 6-8 additions, whisking well after each addition

    until all sugar is properly dissolved. This step can take 10-15 minutes.

  4. Once all your sugar is added, fold in lemon juice and cornstarch and mix well making sure that all starch lumps are dissolved. Scoop out meringue into the circle on the parchment paper and spread it evenly everywhere, making a cavity in the center (to carry the filling). Your cake will be pretty tall. Using a small offset spatula, drag the meringue from the bottom up to create the design of the cake with little spikes on top

  5. Bake the cake for 60 minutes, then reduce the temperature to 280ºF and continue baking for another 45-60 minutes or until crispy & dry to touch. After Pavlova cools down the center collapses which is where you’ll put your filling.

Make Chantilly Cream

  1. Whip heavy cream with powdered sugar and vanilla paste or extract until soft peaks right before assembling & serving Pavlova

Make Roasted Peaches w/ Forbidden Fruit Spread

  1. Preheat the oven to 450ºF. Cut peaches into 1/2 inch chunks and place them into a bowl. Add Forbidden Fruit Spread and 1 tsp. of Lemon juice. Using your hands, toss peaches in this fruit spread and then

A classic Puerto Rican dish of rice & pigeon peas made into breakfast with the addition of chili pepper jam + a sunny side up egg.


Serves 4

Ingredients

  • 2 tablespoon olive oil

  • 1/4 c bacon, diced

  • 1/3 c sofrito

  • 3 c chicken broth, low sodium

  • 2 tsp sazón seasoning

  • 1 cube chicken bouillon

  • 2 tbsp tomato paste

  • 1 tsp oregano, dried

  • 3 bay leaves

  • 3 Tbsp pimento stuffed olives, chopped

  • 15 ounce can pigeon peas, drained & rinsed **

  • 2 cups parboiled rice

To Serve (optional):


** If you can’t find pigeon peas you can substitute with black eye peas

Directions

  1. Add olive oil to a dutch oven over medium heat. Add bacon & sofrito, string occasionally until fragrant and bacon is cooked but not browned.

  2. Add the Sazon, tomato paste & chicken bouillon. Stir to combine.

  3. Add the drained pigeon peas**, oregano, bay leaves, olives and broth. Bring to a boil.

  4. Once boiling, add the rice. Stir & cover to cook until most of the liquid is absorbed.

  5. Stir the rice again then cover again. Lower heat to low & allow to steam cook for another 20-25 minutes until all liquid is absorbed and grains are fluffy.

  6. Take off heat and fry your egg in separate pan.

  7. Serve immediately topping arroz with egg, chili pepper jam & sprinkle with chives.

Directions:

Make Choux Pastry Shell

  1. In a small saucepan combine water, butter,

  2. sugar & salt. Melt the butter and bring the mixture to simmer, stirring occasionally.

  3. Once simmering, add flour all at once. Keep stirring the flour & water mixture for 2-3 minutes until it’s completely incorporated & you can’t see any dry flour bits. The dough should come together into a soft ball & you should see white film covering the sides of the saucepan.   1. Start with warming up 1 1/2c of milk on a stove over medium low heat.

  4. Pour the egg-mixture back into the simmering milk, whisking vigorously to prevent lumps from forming.

An elegant twist on the classic lemon chicken bake. This recipe needs just a few ingredients & a little time, but is show stopping.


Serves 2-3

Ingredients

For the chicken:
-

- 4-5 garlic cloves, crushed
- 1 tablespoon smoked paprika
- 2 tsp turmeric *
- 1 tsp cumin, crushed
- Salt & pepper to taste (start at 1tsp each)
- 2lbs organic chicken thighs & drums

To serve:
- 1/4 lb feta cheese
- 3tbs chopped fresh flat leaf parsley
- 3tbs chopped fresh basil
- Israeli couscous **

Directions

Make Chicken:

- Make Marinade: Whisk together all ingredients (except chicken) in a bowl
- Add chicken to marinade (above mixture), coat throughly. Cover & refrigerate for 2 -6 hours
- Preheat oven to 375F, line a baking sheet with parchment.
- Remove chicken from marinade and place on baking sheet, basting on extra marinade as desired.
- Bake for 25-30 minutes until cooked through. Remove from oven and serve warm.


Serve:

-Mix together: feta, parsley & basil

-cook Israeli / pearl couscous (recipe), top with feta & herbs.

Tulum restaurant Hartwood took the classic Mexican beverage, horchata; a creamy Mexican beverage of toasted rice and warm spices, up a notch and made it into a delicious cake. We upped this one more by adding 久久亚洲精品11p Jam!

Be sure to make the horchata a day before you plan to make this cake. A weekend project & all week treat, promise.


10” cake, 8 servings

Ingredients

CAKE:

6 tablespoons sunflower oil
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 teaspoon ground cinnamon
2 cups sugar
8 tablespoons (1 stick) unsalted butter, softened
3 large eggs
2 large egg yolks
1/2 cup plain whole-milk yogurt
1/2 cup Horchata (recipe below)
2 teaspoons vanilla extract

FROSTING:

3/4 jar 久久亚洲精品11p Jam + 2tbs water

12 ounces cream cheese, softened
3/4 cup confectioners' sugar
2 tablespoons whole milk, or as needed
2 teaspoons light honey
1/2 teaspoon vanilla extract
1/4 teaspoon kosher salt

HORCHATA:

5 cups water
2 cups long-grain white rice
2 cinnamon sticks
1 tablespoon allspice berries
1 zapote negro seed (or 10 whole almonds)
1/2 cup sugar, or to taste

Directions

Make the Cake:

- Preheat the oven to 325°F. Grease a 10-inch springform pan with 1 tablespoon of the sunflower oil or line w/ parchment paper.

- Whisk the flour, baking soda, salt, and cinnamon together in a medium bowl; set aside

-Using a handheld electric mixer on medium-high speed, cream the sugar, butter, and the remaining 5 tablespoons oil in a large bowl until light and fluffy (the mixture will resemble wet sand). Reduce the speed to medium-low and add the eggs one at a time, followed by the egg yolks, beating well after each addition.

-Add the yogurt, horchata, and vanilla, beating to blend. Slowly add the flour mixture, beating just to blend.

-Pour the cake batter into the pan and lightly tap the pan against your work surface to eliminate any air pockets. Bake the cake for 60 -75 minutes, until a toothpick inserted into the center comes out clean; the cake should pull away from the sides of the pan and be golden brown. Let cool completely

Make Frosting:

- Over medium low heat, warm the 久久亚洲精品11p Jam & water let simmer lightly, stirring often to create a thick syrup. Take off heat and allow to cool.

-With a handheld mixer, blend the cream cheese, confectioners' sugar, milk, honey, vanilla, and salt together in a large bowl until smooth and creamy; if necessary, add another splash of milk.

-Remove the cake from pan onto serving plate, frosting as you wish. Adding 久久亚洲精品11p Jam on top of frosted cake.

To Make Horchata:

(makes 6 cups)

-Heat the water in a saucepan over low heat just until it is hot.

-Meanwhile, put the rice, cinnamon sticks, and allspice berries in a large cast-iron skillet and toast, stirring occasionally, over medium-low heat until the rice is golden and the mixture smells nutty. Remove from the heat and pulverize in a blender until you have a very fine powder. Transfer to a medium bowl.

-Pour the warm water over the rice powder. Add the zapote negro seed (or almonds) and sugar. Stir, cover, and refrigerate overnight, or for at least 10 hours.

-Remove the zapote negro seed (leave the almonds, if using), transfer the mixture to a blender, and puree until very smooth. Pass through a fine-mesh sieve or a colander lined with cheesecloth into a bowl or other container. Add more cold water if you'd like to make the horchata thinner and more sugar to taste if desired. Cover and refrigerate until ready to serve, or up to 2 days.

Serves 4

Ingredients

- 1 (8oz) container whipped cream cheese
- 1/2 jar Chili Pepper Jam

To Serve (optional):
- seedy crackers or toasted pumpernickel if you have it
- light lager or IPA beer

Directions

- Add cream cheese to bowl. Whisk a little to fluffy up and make a slight well in the center.
- Add Chili Pepper jam to your liking (we always suggest more is better). Serve immediately

Ingredients

Rice Pudding:
- 4 1/2 cups milk (whole)
- 1 cinnamon stick
- 1 vanilla bean
- 5 cardamom pods, crushed
- 2 strips of lemon peel / zest

- 1 cup arborio rice
- 2 Tbs butter
- 1/3 c brown sugar + 2tbs honey

Toppings:
- Cherry Chai Jam
-Pistachio ice cream

Directions

Make Rice Pudding:
- In a saucepan, heat the milk, cardamom pods, vanilla bean (+ vanilla seeds), lemon zest & cinnamon stick. Just before milk begins to boil take it off heat. Let cool then move to the refrigerator to infuse overnight, but if you can’t wait just give it a few hours.

-Warm the (delicious! infused!) milk in a saucepan over low heat.

-In another, larger, saucepan, melt the butter. Add the rice, and toss to coat the grains.

- Ladle in enough milk to cover the rice and stir over very low (LOW) heat, because burnt milk is nobody’s mate. The rice will start absorbing the milk. When the milk is almost totally absorbed, add a little more milk, let that absorb, add a little more milk, and so on, and so on until all the milk is gone.

-After a few ladles add the brown sugar & honey. Throw in a few pinches of salt to taste along the way. Continue to stir until the rice is tender. The milk will be creamy enough to coat the back of a spoon. Add a little extra milk if its too thick.

-Taste it. Is it sweet enough? Saucy enough? Salted enough? Now’s the time to adjust all that.

To Serve:

-You can serve the pudding warm or cold. Top with Cherry Chai Jam to taste & pistachio ice cream if you please. Add something crunchy if you like (i.e. granola?) — The pudding is even better the next day! —

Ingredients

  • 1 1/4 cup Tvaroh (or full-fat farmer’s cheese**)

  • 1 cup Sour Cream

  • 1/4 cup Powdered Sugar

  • 1 tsp. Vanilla Extract

  • Zest from 1 Lemon

  • ~ 16 Ladyfinger Biscuits 

  • 3 tbsp. 久久亚洲精品11p Sumac Jam

  • 2 cups Fresh Blueberries

Directions:

  1. Line a loaf pan with parchment paper.

  2. Add into a mixing bowl Tvaroh, Sour Cream, Powdered Sugar, Lemon Zest and Vanilla Extract. Mix well until all ingredients are fully incorporated

  3. Place a layer of ladyfinger biscuits on the bottom of lined loaf pan. Spread half of the cream evenly all over the ladyfingers and then smear all of 久久亚洲精品11p Sumac jam on top of the cream

  4. Add a second layer of ladyfingers and then repeat with the remaining cream. Cover the cream with fresh blueberries, wrap the cake into a plastic wrap.

  5. Refrigerate for at least 3 hours or ideally overnight. Serve with your favorite summer lemonade, we suggest this one!

* Tvaroh is a a Slovak-style cottage cheese

** If you can’t find Tvaroh or Farmer’s Cheese you can use full fat cottage cheese. Be sure to press & strain the liquid from the cottage cheese before measuring.

Ingredients

Pastry:
- 1 3/4 cups all-purpose flour
- 1 Tbs sugar
- 1/4 tsp salt
- 8 Tbs cold unsalted butter, cut into small cubes
- 1/4 cup ice cold water

Sour Cherry Filling:
- 2 cups pitted sour cherries (fresh or frozen)
- 3 Tbs sugar
- 1 jar Cherry Shiso Jam

Frangipane:

- 3/4 cups almond flour + 2 Tbs all purpose flour
- 1/4 tsp almond extract
- 1/4 cups sugar
- 2 Tbs unsalted butter, softened
- 1 large egg

Egg Wash:

- 1 large egg beaten w/ 1 Tbsp water
- 2 Tbsp sugar

Directions

Make Pastry:
- Pulse the flour, sugar, and salt together in a food processor fitted with the blade attachment until combined.

-Add the butter & pulse until the mixture resembles coarse crumbs. (It's okay if there are a few large pieces of butter.)

-Drizzle in 2 tablespoons of the ice water & pulse until dough is crumbly in texture but holds together when squeezed. If the mixture is dry, pulse in up to 2 more tablespoons of ice water, 1 tablespoon at a time.

- Turn the dough out onto a piece of plastic wrap. Flatten into a disk and wrap completely in the plastic wrap. Refrigerate for 30 minutes to 1 hour.

Make Filling:

-In a bowl toss together the cherries, sugar and Cherry Shiso jam , making sure to coat all the cherries.

Make Frangipane:

- In a small bowl, mix together the almond flour, sugar, and all-purpose flour.

-Add the butter, almond extract & egg; mix with a spatula until smooth.

Assemble:

-Preheat oven to 375°F.

-Unwrap the dough and place it between two pieces of parchment paper. Roll the dough into a 12-inch round about 1/8-inch thick. Slide the parchment and the dough onto a baking sheet and remove the top layer of parchment.

-Spread the frangipane over the rolled out dough

-Places the cherries on top of the frangipane leaving at least a 2-inch border of crust.

-Fold the crust over top of cherries. Brush the crust with the beaten egg wash. Sprinkle with sugar around crust. 

-Bake until the crust is golden, about 40 to 45 minutes. Allow to cool completely before serving.

**We suggest serving with a large scoop of vanilla ice cream.**

*** The dough can be made up to two days ahead and refrigerated, or it can be frozen for up to two months. ***

Ingredients

  • 2 cups all-purpose flour

  • 2 tablespoons sugar

  • ½ teaspoon kosher salt

  • ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • 2 cups whole milk

  • 3tbs Lemon Juice

  • 2 eggs

  • 3 tablespoons unsalted butter, melted

  • 1 teaspoon unsalted butter, plus more to serve

  • 1/2 jar 久久亚洲精品11p Sumac Jam

Directions:

  1. In a small bowl combine your milk & lemon juice. Set aside for 5 minutes while you prep everything else.

  2. Meanwhile in a large bowl whisk together flour, sugar, salt, baking powder & baking soda.

  3. Add your eggs to the milk & lemon juice mixture, whisk together to smooth. Add melted butter and whisk to smooth.

  4. Add your milk mixture to your flour mixture and whisk just to combine.

  5. Add the butter to a pan over medium low heat. Once the butter begins to bubble, add ⅓ cup of batter to the pan.

  6. Cook until the top side begins to bubble and the bottom is golden brown. Flip the pancake and cook until the underside is golden brown. Repeat with the remaining batter.

  7. Once all your pancakes are cooked make the syrup: add 1/2 jar of 久久亚洲精品11p Sumac Jam to a small pan adding 1/3c water. Turn heat to medium low and stir to combine adding more water if needed to get your desired consistency.

  8. Serve immediately while everything is hot!

- 3/4 c tahini

-1/4 c sesame seeds, toasted

1/2 jar Unicorn Garden Jam

Directions

- Whisk flour, baking powder, and salt in a medium bowl.

- Using an electric mixer on medium speed, beat butter & sugar in a large bowl until light and fluffy, about 3 minutes.

- Beat in tahini, then add dry ingredients in 2 batches, beating after each addition until fully combined. Dough will be slightly sticky.

-Place sesame seeds in a small bowl. Scoop out heaping tablespoons of dough (about 1 oz.) and roll into balls. Dip tops of balls in sesame seeds, pressing to adhere, and place, sesame side up, on 2 parchment-lined baking sheets, spacing about 2" apart.

- Press your thumb into the center of each cookie to leave a little well.

- Add 1 tsp of jam to the center of each cookie

-Bake cookies, rotating baking sheets halfway through, until golden brown, 13–15 minutes. Let cool on baking sheets (cookies will firm as they cool).

* Make these vegan:

Serves 4

Ingredients

- 2 tbs smooth peanut butter (natural, no sugar added)
- 1/2 jar Chili Pepper Jam
- 1 clove garlic, finely minced
- 2tbs soy sauce
- 2tbs toasted sesame oil
- 1 tbs rice vinegar

Directions

- Add all ingredients in a bowl. Whisk to combine. Serve immediately or store in frig for up to 1 week.
- Add more soy sauce & Chili Pepper jam to your liking (sweet or salty)

- We love this on everything but some quick fix suggestions are:

This cake by Slovak baker Lenka Gengelova is a childhood favorite. The combination of best things summer has to offer – refreshing sour cream & seasonal sour cherries. Not too sweet, tart & flavorful with a touch of saltiness from the traditional Lavash.


Ingredients


- Plain Lavash Bread – 6 rectangle slices of size 5”x10” (or of a size of your loaf pan) 

- 300g/10.5 oz sour cream
- 100g/10 Tbsp heavy cream
- 50g/2 Tbsp condensed milk
- 50g/5 Tbsp Cherry Chai Jam
- 200g/ 7oz Sour Cherries (fresh or frozen)

-10g/2 tsp cornstarch

-Cocoa Powder

Directions

-Start with the cream. Whisk together sour cream, heavy cream and condensed milk (or honey) with a hand whisk or with a whisk attached to your standing mixer until you’ll get a nice & thick cream (do not overmix). Place into the fridge until ready to use.

-Cook your Sour Cherries in a small saucepan for 5-8 minutes or until they start to simmer. Once simmering, stir in cornstarch dissolved in a tablespoon of water while stirring constantly. Keep mixing and cook for another minute or until the mixture thickens up. Now take off the heat and mix in a Cherry Chai Jam & set aside.

-Prepare layers of the lavash bread (they will be easier to roll if you warm them up in the microwave/oven a little bit). Divide your warm cherries between 6 layers of the lavash and roll each sheet tightly.

-Place 3 lavash rolls next to each other in a small loaf pan to fill up the bottom. Spread a generous amount of cream on top of them and alternate with layers of lavash & cream - finishing with the cream. Dust with some cocoa powder and let it sit in the fridge overnight or as long as you can resist.

- Eat within 3 days.

Simple & healthy. Greens beans & edamame get a fiery kick with a touch of Chili Pepper jam.


Serves 4

Ingredients

- 1/2lb green beans
- 1/2c Chili Pepper Jam
- 1/2c edamame, frozen
- 4 garlic gloves, sliced thin
- 3tbs olive oil
- sea salt (to taste)

- 1/4c sliced almonds
- 2tbs sesame seeds

Directions

- Blanch your green beans and edamame in salted, boiling water for 2-4 minutes depending on your done-ness preference. Immediately remove from heat, drain and drop them into ice cold water.


- Once again drain the beans well in a colander and set aside to dry a little. Use a paper towel if you wish.

- Place your sliced almonds & sesame seeds in a pan over medium low heat. Toast the nuts & seeds stirring every few minutes until golden brown. Set aside.

- In a pan over medium heat, heat your olive oil and sliced garlic. Allow garlic to cook just until golden. Turn off heat. Carful not to burn!

-Add the beans to the pan with oil and toss to combine. Season with salt to taste.

To serve:

-Add beans to plate, drizzle with Chili Pepper Jam*

-Sprinkle toasted almonds & sesame on top

* You can heat the jam over low heat stirring quickly if you would like to thin it a little for drizzling.

** If you don’t have sesame or edamame its ok to omit, :)
